Food business operators are required by law, to ensure that food handlers receive appropriate supervision, instruction and training in food hygiene in line with their work activity to enable them to handle food safely. They must also ensure that those responsible for developing and maintaining the business’s food safety management procedures, based on the principles of Hazard Analysis and Critical Control Point have received adequate training.
If you serve or supply food direct to the public, you may be covered by the Food Hygiene Rating Scheme. This means that when a business is inspected, a hygiene rating from '0' at the bottom to '5' at the top is given, based on the hygiene standards found at the time.
